perfect hard boiled eggs

Does your hard boiled eggs have a green circle or grayish hue around the yolk?  You done over cooked ‘em.  Here is a foolproof method.  Cooking method is the same no matter how many eggs.  Make sure that the pot is big enough so the eggs aren’t too crowded and has a tight fitting lid.

Place your eggs in a pot and fill just above the eggs with cold water.

 

Put the pot on the stove over high heat and wait for it to come to a boil.  Once it comes to a boil, remove from heat, cover with lid and let sit 12 min.

After the 12 min put pan in the sink and run cold water for at least 5 min.  Add some ice cubes and let cool completely.  If your ice cubes melt instantly run some more cold water in the pan and add more ice.  You want to let the eggs cool in the ice bath for at least 10 min.

There are lots of tricks to peeling eggs-shake them in a pan, roll on the counter, blow the shell off (really).  It has to do with the age of the egg.  Older eggs are easier to peel then farm fresh eggs.  I just crack in the counter and slowly peel under cold water-make sure to rinse♥Enjoy
