BACON PEANUT BUTTER BLONDIES WITH DARK CHOCOLATE GANACHE

I’ll repeat that one more time; bacon peanut butter blondies with dark chocolate ganache.  Didn’t think it was possible to have all your favorite flavors in one bite?  I finally took the plunge and made a dessert with bacon (bacon flavored coffee is next, kidding) and, YES it’s just as good as it sounds.

4 slices thick cut bacon
1 stick unsalted butter
1 1/2 cup light brown sugar
1/2 cup creamy or crunchy peanut butter-I used creamy, but think crunchy would give a great texture and would suggest using.
2 eggs
2 tsp vanilla
1/2 tsp kosher salt
1 tps baking powder
1/4 tps baking soda
2 cups flour
2/3 cup peanut butter chips
 
makes 10-12 bars
prep baking and cooling time 4 hours
350°
 

With kitchen scissors, snip bacon into med sized pieces and add to a large cold skillet.  Turn heat to med high heat and cook bacon until slightly crispy, remove bacon and drain on a paper towels.  Discard all but 1 tbls of the bacon fat.

     

Add the butter to the pan along with the bacon fat and slowly melt, scraping the bottom of the pan. 

    

Add the brown sugar and cook over med heat until the sugar is melted.  Stir in the peanut butter. 

    

 

Pour the mixture into a mixer bowl and let cool at least 15 min.  Mix on med high speed to cool off more before you add the eggs.  Pre heat oven to 350°. 

 

 

Add the eggs one at a time to the warm mixture making sure to continue mixing until the batter is thicker, 7-10 min. 

    

Add the baking power, baking soda, and salt, mix.  Add the flour all at once and mix only until almost blended, don’t over do it.

     

Add the bacon and peanut butter chips and mix in with a wooden spoon.  Spread evenly into a baking pan (I used a 11×7 glass pan) and pop in the oven for about 25-30 min, rotating half way through until a toothpick comes out clean.  Let cool a couple hours before you pour the ganache on top.

    

Pour 1 cup dark chocolate chips or chunks into a med sized bowl, set aside.  In a small sauce pan heat 1/2 cup heavy cream over med high heat just until you see small bubbles around the sides.  Pour the cream over the chocolate and whisk until combined (I had to add another splash of cream).

    

Drizzle or pour over the blondies and don’t forget to lick the spoon♥Enjoy
