CARMELITAS

•It’s like a buttery oatmeal walnut cookie swallowed a chocolate caramel bar.  Easy enough to make, but you have to wait a couple hours to let them cool and set so they can be cut easily.  Or if you don’t care how they look serve warm (not hot out of the oven) with a spoon and ice cream would be amazing.  I would suggest if you go the patient route to warm your piece up for 15 seconds in the microwave to get the caramel soft and oozy.

32 caramel squares, unwrapped
1/2 cup heavy whipping cream
3/4 cup unsalted butter, melted
3/4 cup brown sugar, packed
1 cup flour
1 cup rolled oats-not quick cook
1 teaspoon baking soda
1/2 tsp salt
1/2 cup chopped walnuts
6 ounces (half a bag) semisweet chocolate chips
 
 

Combine caramels and cream in a small saucepan and slowly warm over low heat-make sure to keep an eye on it. Stir until completely smooth; set aside.

In a separate bowl, combine melted butter, brown sugar, flour, oats, walnuts, salt and baking soda.

 Pat half of the oatmeal mixture into the bottom of an 8×8″ pan. Bake at 350 degrees for 10 minutes.

 Remove pan from oven and sprinkle chocolate chips over crust. Pour caramel mixture over chocolate chips.

Crumble the remaining oatmeal mixture over caramel. Return to oven and bake another 15-20 minutes, until the edges are lightly browned. Remove from oven and cool completely before cutting.  They should be stored and served at room temperature.  This recipe can be easily doubled♥Enjoy
