CHICKEN SALAD WITH TARRAGON AND GRAPES
•This is so delicious! I really should stop my post right here. The mix of ingredients might sound a little out there, but man-o-man is it tasty. Serve on top of some crunchy lettuce with some grilled bread, or inside of a pita or tortilla with some spinach or sprouts. Would also be yummy on crackers or crostini for an appetizer.
3 cups diced cooked chicken breast 1 large shallot-finely minced 2/3 cup seedless red grapes-cut in half 2/3 cup seedless green grapes-cut in half 1/4 cup finely diced celery-approx 1 stalk 1 tbls finely minced tarragon leaves-plus a little more for garnish 2/3 cup mayonnaise 2 tbls dijon mustard 1/2 tsp kosher salt 1/2 tsp cracked black pepper serves 4 best if you let the flavors get acquainted for at least 2 hours in the fridge
Mix together the mayo, mustard, salt, pepper, celery, and shallot. Stir in the chicken until combined. Carefully stir in the grapes and tarragon. Cover and pop into the fridge for at least a couple hours♥Enjoy (I know you will)
