GRAPEFRUIT AND TARRAGON POPSICLES

This is a delicious and refreshing combination of flavors.  Light hint of licorice and tart grapefruit all tied into one, and when you bite into a little bit of juicy pulp…yum!!  This isn’t any ordinary popsicle and would be perfect for a summer baby shower or add some vodka and make them for a bridal shower.  I used my old standby Tupperware popsicle kit and used craft sticks that I glued a couple jewels on to.  You can use whatever mold you have or even use clean little yogurt containers with craft sticks and foil.  I just love popsicles and eat them all year long.  I’m not one bit embarrassed to admit that as I sit here writing this post and glance over at my side table that there is a pile of jewel encrusted craft sticks….yes I ate them all myself!

 

1 cup water
1 cup sugar
2 tbls chopped fresh tarragon
1/8 tsp kosher salt
3 long peels of grapefruit skin
1 3/4 cup freshly squeezed ruby red grapefruit juice-approx 4 grapefruits
1 lime-juiced
 
makes approx 8-10 posicles depending on what mold you use
prep, steeping and freezing time 5 hours
 

In a med sauce pan, add the water, tarragon, and sugar-whisk.  Bring to a light bubble, and stir until the liquid turns clear-about 5 min.  Remove pan from heat and set aside.

Using a vegetable peeler, peel 3 long strips from the grapefruit, making sure not to get the bitter white part.

Add the peel to the tarragon syrup and let steep for 1 hour.

Meanwhile juice the grapefruit.  Don’t worry about the pulp, you can strain it out later.  I kept some of it in for mine, I enjoy the juicy burst of flavor.  Squeeze in the lime juice.

Place a fine colander or mesh sieve over a med bowl.  Strain the tarragon syrup.  Discard the tarragon and zest.

Pour the grapefruit and lime juice through the colander.

I added back in some of the pulp, your choice. 

Mix together with a whisk and pour into the molds and let freeze for at least 4 hours♥Enjoy

To try and distribute the pulp, I didn’t add the sticks until after they were in the freezer for a hour and gave them a little stir before.
