OVEN BAKED FRIES
•I have this amazing group of girls in my life who I’m so proud of. I’ve seen them grow from teenagers to young women. They are all in different stages of their lives now; in college, living on their own, working, engaged, home owners, but none pregnant…yet (you know who you are). I really started this website because of them. I just enjoyed so much teaching them the basic cooking skills like a mom would and being there to listen and give advice like a friend (ok a straight shooting, honest, overly protective friend). This recipe is for them because who knew fries didn’t always have to come in bag from the freezer section. It’s cheap, low fat and easy to make. Come on who doesn’t love fries?
2 large russet potatoes-scrubbed clean 2 tbls vegetable oil 1/2 tsp kosher salt 1/2 tsp ground black pepper Serves 4 Prep and cooking time 1 hour 15 min approx 400° oven Cut your potatoes in half lengthwise and lay cut side down on cutting board and cut into even wedges or strips-just keep in mind the smaller you make them the more you will have to flip half way through and the less time is will take to cook.
Toss the cut potatoes in a large bowl of cold water and let sit at least a half hour-this keeps them from turning brown and gets some of the starch out which makes them crispier (my lesson for the day) You can also leave them in the water and in the fridge overnight to be one step ahead of the game. When ready to season and cook take the potatoes out of the water and pat dry with paper towels.

Put potatoes back in the bowl (make sure to dry it first) add the oil, salt and pepper. Spread evenly on a rimmed baking sheet lined with foil or parchment paper.

Bake 400° for 30-45 minutes until edges are crispy and fluffy in the middle-make sure to take out the baking sheet and flip each fry with a spatula half way through and rotate the pan. Let drain on paper towels for a couple minutes♥Enjoy
•Flourish-you can add dried rosemary along with the salt and pepper, or minced garlic when you flip the fries and fresh parsley right before serve
