•Oh, that panko is making an appearance again…. this meal came together quickly and it’s all baked in the oven. With some homemade tartar sauce, a squeeze of lemon and an ice cold beer, you’ll be all set.oven baked fries (I cut the potatoes into thinner strips for this recipe) 2 lbs cod fillets cut into wide strips 2 cups panko breadcrumbs 1/2 tsp kosher salt 1/2 tsp black pepper 1/4 tsp red pepper flakes 1 tbls lemon zest 2 eggs 2 tbls olive oil serves 4 prep and cooking time 1 1/2 hours
Make the oven baked fries according to the directions, cutting them slightly thinner. Cooking and prep time will take about a hour. Fish cooks at a higher temperature, 450° and and takes 15-20 min or so. You want the fries and fish done at the same time or the fries waiting for the fish. Unless you have two ovens the options are to cook the fries to just about done @ 350°, pull them out and let them sit on the counter for about 15 min. Turn up oven to 450° for the fish. When fish are almost done (about 5 min left to cook) add the fries back into the oven to crisp and heat up OR take your chances and cook the fish and fries at the same time @ 450°, if fries cut thinner this might be the best option, but keep an eye on them so they don’t burn. I opted for the cook the fries first and add to the hotter oven with the fish later.
For the fish, heat oven to 450°. Line two baking sheets with aluminum foil or heavily spray 2 broiler pans; set aside. Cut the cod into strips and season with a pinch of salt and pepper. Crack eggs into a wide shallow bowl or plate; season with a pinch of salt and pepper. On another plate combine panko, lemon zest, salt, pepper and red pepper flakes and oil. Dip cod into egg, shaking off excess, then into the panko mixture, pressing a little. Place on prepared baking pans.
Bake until lightly browned, 12 to 15 minutes, rotating sheets from top to bottom halfway through and flipping the fish. Serve with tartar sauce and lemon wedges on the side♥Enjoy
•Tartar sauce can be made the day before. The potatoes can also be prepped and left in cold water in the fridge the day before.
