PEANUT BUTTER CUPS

•A small sweet treat that you can whip up in no time with things you probably already have in your cupboard.  The peanut butter filling is smooth and creamy with a little taste of honey and the chocolate is, well, delicious chocolate that melts in your mouth.  You can also use whatever chocolate that you like and crunchy peanut butter to add a little more texture.  Side note…..the white chocolate peanut butter cups were the taste testers favorite. 

1 cup chocolate chips- I used 1/2 cup each semi sweet and 1/2 cup white chips to make two different kinds
2/3 cup creamy peanut butter
1 tsp unsalted butter- at room temp
2 tsp honey
1/4 tsp kosher salt- optional, depending on your peanut butter
1/4+ 1/8 cup powdered sugar- I’m sure there is a precise fraction, but not a measurement ( just over 1/3 cup) this is a cooking blog, not a math blog for heavens sake =)

takes about 30 min to make and under a day to eat them all
the chocolate is solid with a crunch, that we like,  but if you add some vegetable shorting it will soften up the texture.
 

Place the chocolate chips into a microwave safe bowl.  Microwave on high heat in 30 second intervals, stirring each time, until completely melted- takes 3-4 times.  You want to make sure not to burn the chocolate and is very important to stir.

While the chocolate is melting mix together in a different bowl, the peanut butter, butter, honey, salt and powdered sugar.

If you have a little mini muffin tin….awesome, but if not, line a plate with 15 little candy paper liners.  Scoop about 1 tsp melted chocolate into each liner.  Save half of the melted chocolate for the topping.  You can brush the chocolate up the sides to give it more of a professional look, but I like the more homemade look with the peanut butter peaking out.  Place the tin or plate in the freezer for 5 min.

Pinch off about 1 tsp of the filling and roll into balls.  Place the peanut butter balls into the now set chocolate cups, smushing down a bit.

If your previously melted chocolate has started to harden, put back into the microwave, again in 30 second intervals, and stir.  Spoon the remaining chocolate over each cup, lick any leftover chocolate out of the bowl and, pop the plate or tin back into the freezer 15 min.  

Store in the fridge for a week, but they’ll be gone before the sun goes down♥Enjoy
