PULLED PORK BURGERS WITH HORSERADISH CILANTRO SLAW
•Tangy BBQ’d pulled pork topped with a spicy, cold, and crunchy slaw, and, of course, a little cheese never hurts. Easily double the recipe for a big crowd or even make the ribs a couple days before and reheat for a quick weeknight meal.
1 order of blaine’s ribs - meat shredded with a couple forks -I made ribs for 2 of us for Sunday dinner and with the leftovers we had burgers on Tuesday 1 1/2 cups shredded red cabbage 1 1/2 cups shredded green cabbage 1 small carrot- shredded 1 tbls diced red onion 1 tbls chopped cilantro 1/2 cup mayonnaise 1 tsp prepared horseradish- I used extra hot 1 tsp sugar 1 tbls + 1 tsp white wine vinegar- could use apple cider instead 1/2 tps black pepper 1 tsp kosher salt hamburger buns-toasted, or not shredded or sliced cheese of your choice- I used cheddar serves 4-6 prep and cooking time -slaw 1 hour (the longer it sits in the fridge the better) pulled pork 1/2 hour- 9 hours (depends if you’re starting the ribs from scratch or using leftovers)In a large bowl mix together the mayo, horseradish, sugar, salt, pepper, and vinegar. Set aside.
Quarter and core the cabbages-wash well under cold water. Using a food processor or knife shred into thin strips (roughly 1 quarter of a cabbage, shredded will equal 1 1/2 cups). Toss into the bowl with the dressing.
With the processor or cheese grater, shred the carrot. Dice the red onion and chop cilantro. Toss into the bowl with the dressing.
Mix all of the veggies together with the dressing, cover and let sit in the fridge for at least a 1/2 hour, but can sit for up to 3 hours before the red cabbage takes over the over the color of the slaw.
If you’re reheating leftover ribs; shred meat with a couple forks, add more BBQ sauce or a little water, if needed, into a pot and heat on the stovetop over medium heat until temperature reaches 165° on a food thermometer. Takes about a 1/2 hour. If the ribs directly from the slow cooker, shred with a couple of forks. Add the shredded meat on top of buns, top with shredded or sliced cheese (pop under the broiler for a min to melt cheese if desired) and top with the slaw and maybe serve with a side of oven baked fries♥Enjoy
