ROASTED SWEET POTATO BACON AND APPLE HASH

•The flavor and texture combinations of the salty chewy bacon, soft sweet potatoes and crunchy tart apples is something songs or poetry is written about.  Ok, that sounds dorky…it’s just flat out good!  Serve with a side of scrambled eggs or maybe sunny-side up or poached eggs right on top.

6 strips thick cut bacon
2 yams/sweet potatoes (whatever you call them, brown peel with orange flesh) -peeled and diced into bite size pieces
1 large onion-large dice
2 granny smith apples-large dice
2 cloves garlic-minced
3 sprigs thyme-leaves taken off stems
1/2 tsp kosher salt
1/2 tsp black pepper
1/2 tsp red pepper flakes-more or less as you like
2-3 tbls olive oil
half a handful of roughly chopped parsley-for garnish (everything looks better with a little sprinkling of green)

This is all cooked in the oven, I find it much easier and better texture than cooking in a skillet; the potatoes would stick and get mushy and the apples wouldn’t keep their slight crunch.  Roasting the potatoes separate from the apples and onions in the oven insures the correct doneness and you don’t have to babysit things on the stove top.

Heat your oven to 400°.  Line two rimmed sheet pans with foil or parchment paper. Lay the bacon out on one and put in the oven for 10-15 minutes until it’s done to your liking, rotating and flipping once.

Meanwhile get the potatoes peeled and cut, tossing them on the second sheet pan along with 2 tbls olive oil, the salt, red pepper flakes and black pepper; toss with your hands, adding the other tbls of olive oil if needed.  Yours won’t turn brighter orange, I just couldn’t get a good picture of the potatoes on the sheet pan (only tried 35 times).  Set aside

Dice up the apples and onion, mince the garlic and get the thyme leaves off the stems; leave on cutting board until the bacon pan is available.

Pull the bacon out of the oven and place them on a paper towel lined plate to drain making sure not to lose any of that precious bacon fat on the sheet pan.  Ok ready?  This is where it gets good.  Carefully add the apples, onion, garlic and thyme to the same sheet pan you cooked the bacon on and toss with the bacon fat using a spoon.

Put both of the sheet pans in the oven and cook approx 20-30 min.  Make sure to rotate pans and flip around with spatula.  They should be both done around the same time.  Potatoes are done when they are soft and slightly brown around edges.  The apples/onions are done when the onions are softened, but the apples are still a little crunchy.  Pour both sheet pans onto a large serving platter, add the bacon (torn into large pieces), mix, and sprinkle with parsley♥Enjoy
