SMITTEN S’MORES

•Ok, these might be a little over the top, but there ain’t no rest for the wicked when it comes to Valentine’s Day!  It’s my favorite holiday.  It took myself and my junior smitten, Jessica (thanks kiddo) a strong 4 hours to make and assemble.  But come on…..how cute are they? You can plan ahead and make the cracker dough and marshmallows the day before, keep in airtight containers and assemble the s’mores the next day.  If you’re nervous to tackle the whole project just make the honey & orange graham crackers for after school snacks or the marshmallows (they are corn free) for a toasting over a fire or plop them into a giant mug of hot chocolate.

 

1 batch of honey & orange graham crackers
1 batch of marshmallows - you can tint with food coloring or add another flavor -orange or raspberry extract or liquior perhaps
1 12 0z bag of dark chocolate chips or chunks
sprinkles- I wouldn’t use sugar sprinkles, the little ball ones worked best
*also I had a set of graduating heart cookie cutters and made the marshmallow one size smaller then the graham crackers, but using the same size is ok.
 
 

Heat about 1 inch of water in a medium sized pot to a simmer; you may need to add more.  Place a non-reactive metal or glass bowl that is slightly bigger then the pot on top.  Make sure that the bottom of the bowl doesn’t touch the water -this is called a bain-marie (lesson for the day).  Pour in your chocolate chips and slowly melt over the simmering water; making sure not to walk away and keep stirring.  Once the chocolate is just about melted, pull the bowl off with hot pads and set aside; the residual heat will keep melting the chocolate. 

 

 In a large drinking glass, place a heavy duty plastic bag inside, folding the top over the edge of the glass (this gives you an extra pair of “hands” so you don’t burn yourself with the chocolate).  Slowly pour in 1/4 of the melted chocolate inside of the bag.  Twist the top of the bag to get rid of air bubbles and clip off a small tip from the bottom corner-now you have a pipping bag.

Turn two cookies bottom side up and pipe the melted chocolate a little bit in from the edge on both cookies, following the shape.  Add the marshmallow and sandwich the 3 together, pressing lightly.

Squeeze any leftover chocolate in bag back into your bowl.  If your chocolate in the bowl is hardening place back on the pot with simmering water to heat back up, just keep an eye on it.  Lay out some foil or parchment paper on the counter and start dipping just the edge of your s’mores into the chocolate; letting the excess drip back into the bowl. Sprinkle, we did half with sprinkles half without.

Place on foil lined baking sheets on the counter, trying not to lay directly on the chocolate side.  Let sit to cool completely-fridge will speed up the process if you’re anxious.

Store in airtight containers for up to a week.  So cute placed in cellophane bags tied with ribbons and given as gifts OR keep them all to yourself!
