STRAWBERRY FRUIT SNACKS

The boys were here for spring break last week and I recruited them to help me with this post.  It turned out to be pretty easy and yummy, even though it was so nicely pointed out that it looked and wiggled like skin, yup 100% boys.  I found this recipe via Pinterest and had 203 repins (still the most ever).  I have packets of gelatin coming out of my ears ever since I bought the only crate box available for my smitten s’mores recipe and thought this recipe would be perfect to put a dent in my stash.  Can mix it up using different kinds of juices and fruits.

2 cups sliced strawberries
1/2 cup water
1 cup unsweetened applesauce
1 cup fruit juice-we used apple and grape (made 2 different kinds)
3 packets gelatin (1 packet = 2 1/2 tsp)
squeeze of lemon-approx 1 tsp
1 tbls + 1 tsp sugar-optional, our berries weren’t summertime ripe
 
makes approx 25-30 small squares, but can make any size and even cut out with cookie cutters
prep and chillin time-3 1/2 hours
 

When we made ours, we used two different kinds of juice, 1/2 cup apple and 1/2 cup grape (because brothers can’t agree on much) in different bowls, added the gelatin, 1 1/2 packs each, and divided the fruit puree, but you can use all one flavor juice and one bowl to make it easier.

Measure out the juice(s) and pour into a bowl(s).

Add the gelatin, mix and let sit.

Wash and slice strawberries into a med sized sauce pan.  Add water and sugar.

Add a squeeze of lemon.

Bring to a boil.

Pour into a blender or food processor, carefully blend.

Pour puree back into sauce pot, add applesauce, and bring back to a boil, turn off heat.

Remember the gelatin and juice (Now can’t get that Snoop Dogg song out of my head) this is what it turns in to.

Grape juice

                                                      

Apple juice 

Pour the hot fruit mixture over and stir.

Pour into 2 8×8 glass baking dishes, or whatever size you have.  

Pop in the fridge for 3 hours, cut into desired shapes♥Enjoy
