THE PERFECT STEAK SANDWICH
•Now that you know how to make the perfect sirloin steak, well heck, let’s make the perfect steak sandwich! A toasted crusty roll slathered with a tangy blue cheese yogurt sauce is the vessel that holds the perfect steak, fresh arugula, and spinach……let’s get to business:)

1 8oz sirloin steak
arugula, spinach or lettuce
2 crusty hoagie rolls
for the sauce
4 tbls greek yogurt
1 tsp whorchestershire sauce
1 garlic clove-minced
1 tsp parsley
1/4 cup blue cheese crumbles
pinch of black pepper
makes 2 sandwiches
prep and cooking time 45 min
Follow the directions on how to pan cook the perfect sirloin steak
While the steak is sitting on the counter coming to room temp, make the sauce….
In a med bowl mix together the greek yogurt

worchestershire sauce

fresh chopped parsley

minced garlic

and blue cheese crumbles.

Mix together and taste for seasoing-I added a pinch of black pepper. Put sauce in fridge and let the flavors mingle while you finish the steak.

Before you start cooking the steak, preheat your oven to 400° or broiler for toasting the bread a little later.
Once the steak is done cooking and it’s resting on the cutting board, toast your rolls.

Assembly
Slice the steak, against the grain (See step 8), into thin strips.
Divide the blue cheese yogurt sauce between the two rolls.

Add the greens.

Lay on the steak.

Sandwich together♥Enjoy

Other ideas for toppings are sliced tomatoes, carmalized onions, or pickled jarred veggies.
