WATERMELON AND GOAT CHEESE SALAD WITH MINT

A great summer salad that would pair well with anything you want to throw on the grill.  You could also substitute feta cheese if goat cheese isn’t your thing, actually it’s what I was looking for, but we had some extra goat cheese from making the balsamic strawberries and goat cheese crostini with basil a couple weeks ago.  The goat cheese has the same pungency as feta, but is much creamier and compliments the watermelon just as well. We even experimented with blue cheese, but surprisingly the taste was lost in he flavor of the watermelon.

  

1 seedless watermelon (med size)-washed, rind removed and cut into chunks.  Make sure to start with a cold watermelon.
8 oz goat cheese
1 small red onion-cut into thin half moon shape
1 lime
1/4 cup chopped mint leaves
tiny pinch of kosher salt and black pepper
serve 4-6
 
prep time 20 min-make sure you put the watermelon in the fridge the night before or earlier in the day to chill before you cut it.
 

Add the cubed watermelon into a med sized bowl.  Add in the sliced onion and squeeze in the juice of the lime (approx 1 tbls).

Sprikle on the mint and salt and pepper-toss.

Crumble the goat cheese on top and serve right away♥Enjoy
