•A great summer salad that would pair well with anything you want to throw on the grill. You could also substitute feta cheese if goat cheese isn’t your thing, actually it’s what I was looking for, but we had some extra goat cheese from making the balsamic strawberries and goat cheese crostini with basil a couple weeks ago. The goat cheese has the same pungency as feta, but is much creamier and compliments the watermelon just as well. We even experimented with blue cheese, but surprisingly the taste was lost in he flavor of the watermelon.
Add the cubed watermelon into a med sized bowl. Add in the sliced onion and squeeze in the juice of the lime (approx 1 tbls).
Sprikle on the mint and salt and pepper-toss.
Crumble the goat cheese on top and serve right away♥Enjoy
