Ingredients
  

Protein & Dairy

  • 3 cups cooked shredded chicken rotisserie chicken works well
  • cups shredded mild cheddar cheese
  • ¾ cup cream cheese softened
  • 1 cup whole milk

Soup Base

  • 6 cups low-sodium chicken stock
  • 10.5 oz condensed chicken soup

Seasoning & Flavor Enhancers

  • 1 oz ranch dressing mix
  • 12 slices thick-cut bacon cooked and crumbled

Vegetables

  • ½ cup chopped celery
  • 2 medium carrots sliced

Noodles

  • 8 oz thin spaghetti or angel hair pasta uncooked

Instructions
 

  • Cook thick-cut bacon in a skillet over medium heat until crispy. Drain on paper towels, then crumble. Reserve some for garnish.
  • In a Dutch oven, add shredded chicken, condensed soup, chicken stock, milk, cream cheese, carrots, celery, and Ranch mix.
  • Stir well and bring to a gentle boil over medium-high heat.
  • Reduce heat to medium-low and let simmer for 20–25 minutes, stirring occasionally.
  • Stir in uncooked noodles and cheddar cheese. Simmer for another 8–10 minutes until noodles are tender and cheese has melted.
  • Top with extra crumbled bacon before serving. Enjoy hot with garlic bread or a side salad.

Notes

Substitutions: Use Monterey Jack or Colby cheese for a different flavor. Swap chicken breast for rotisserie chicken for convenience. Replace spaghetti noodles with egg noodles or gluten-free pasta as needed.
Storage & Reheating: Refrigerate in an airtight container for up to 3 days. If freezing, store without noodles to prevent sogginess. Add fresh noodles when reheating.
Make It Healthier: Use low-fat cream cheese and milk for a lighter version. Add extra vegetables like spinach or peas for more nutrients.
