- 3 cups cooked shredded chicken rotisserie chicken works well
- 1½ cups shredded mild cheddar cheese
- ¾ cup cream cheese softened
- 1 cup whole milk
Soup Base
- 6 cups low-sodium chicken stock
- 10.5 oz condensed chicken soup
Seasoning & Flavor Enhancers
- 1 oz ranch dressing mix
- 12 slices thick-cut bacon cooked and crumbled
Vegetables
- ½ cup chopped celery
- 2 medium carrots sliced
Noodles
- 8 oz thin spaghetti or angel hair pasta uncooked
Instructions
- Cook thick-cut bacon in a skillet over medium heat until crispy. Drain on paper towels, then crumble. Reserve some for garnish.
- In a Dutch oven, add shredded chicken, condensed soup, chicken stock, milk, cream cheese, carrots, celery, and Ranch mix.
- Stir well and bring to a gentle boil over medium-high heat.
- Reduce heat to medium-low and let simmer for 20–25 minutes, stirring occasionally.
- Stir in uncooked noodles and cheddar cheese. Simmer for another 8–10 minutes until noodles are tender and cheese has melted.
- Top with extra crumbled bacon before serving. Enjoy hot with garlic bread or a side salad.
Notes
Substitutions: Use Monterey Jack or Colby cheese for a different flavor. Swap chicken breast for rotisserie chicken for convenience. Replace spaghetti noodles with egg noodles or gluten-free pasta as needed.
